Greek Chicken and Rice Instructions:
Prepare the vegetables by cutting the squash and zucchini into bite sized pieces. Dice or slice the red onion, whichever way your family prefers.
Add the uncooked rice to the instant pot, then add water to the rice. Add squash, red onion, oregano, thyme, and zucchini.
Place lid on the instant pot. Set the valve to sealed position. Press pressure cook or manual button and set to 4 minutes.
Once the instant pot stops counting it will beep and start counting up. Leave it for 30 minutes then release pressure.
Meanwhile, use a knife and fork to shred the precooked chicken into small pieces and dice the Roma tomatoes.
